Glazed Pears with Nut Cream
Top notch 5-star dessert that will surprise your guests! Not containing processed sugars and other harmful ingredients, this favorite recipe of mine is another proof that not all desserts are unhealthy and should make you feel guilty for having a “sweet tooth”.
Ingredients
Pear Halves:
- 2 cups apple or pear juice
- 5 pears, halved and seeded
- 3 tsp freshly squeezed ginger juice
- 2 heaping tsp Kuzu root, diluted in
- 2 tbsp cold water
Nut Cream:
- 2 cups pecans, cashews, or any other nuts
- 1/2 cup soy or nut milk
- 1/4 cup rice syrup
- 2 tsp vanilla extract
Step by Step Instructions
Combine pears in a pot that can hold pears in a single layer with juice and steam pears until soft. Take pears out and arrange on a platter or baking dish. Thicken juice in the pot by stirring in diluted kuzu and ginger juice. Pour juice over the pears.
To make nut cream, preheat oven to 350F/175C. Place nuts on a cookie sheet and bake for 10 min until they give out nutty fragrance. Do not leave nuts unattended as they can burn very quickly. Transfer to a food processor, grind to a paste. While running the machine, add remaining ingredients and process until smooth and creamy.
To complete the dish, spoon the pecan cream over the pears or serve the pears with cream on the side.
