Soft Lemon-Plum Cookies

This very simple and easy-to-make baked goodie, free of gluten, dairy, sugar, and white flour, will not make you feel guilty for eating fattening sweets. With such a cookie, drinking tea becomes just an absolute pleasure!


  • 2 cups dried prunes
  • 1 ½ cups raisins
  • 1 ½ cups boiling water
  • 1 cup brown rice flour
  • 1 ½ cups oat flakes
  • ½ cup unsweetened shredded coconut
  • 1 tsp baking powder
  • ½ tsp lemon extract

Step by Step Instructions

Preheat oven to 350F/175C.

Place raisins in a small bowl, top with hot water, cover, and let sit for 10-15 min.

Transfer softened raisins and its water in a blender, add prunes and blend until all turns into a soft paste.

Transfer this paste into a bowl. Mix in lemon extract. Add all the dry ingredients and mix very well.

Let this mixture sit for 5 minutes to get thicker. Then wet your hands and make cookies shaping them up into a thick circle. Place on a cookie baking sheet lined with parchment paper.

Cookies bake for 25 minutes.
